Fishing Amarillo
Southeast of Amarillo the flat high plains simply drop away into Palo Duro, the second-largest canyon in the country, with red and orange rock walls and a floor laced with hiking, mountain biking, and horseback trails. The canyon makes its own conditions: it runs hotter than the rim in summer, holds shade in the mornings, and turns loose fast when a thunderstorm dumps on the caprock above, since the drainages funnel water into the same washes the trails follow. Spring and fall are the sweet spot, but this is genuine four-season country — winter brings cold, wind, and snow that puts the red rock under white and makes for some of the best walking of the year if you dress for it. Day-to-night temperature swings up here are wide enough to catch people out.
